Lamb Shanks with Garlic and Herbs

My husband and I just got finished inhaling this and I had to share.

From Atkins for Life Low Carb Cookbook, by Veronica Atkins. According to her, the recipe is appropriate for all phases of Atkins, if you are into that sort of thing. I'll post the nutritional info after the recipe proper.

That sounds wonderful! I'm wondering how it would do with beef instead of lamb (my husband isn't a huge fan of lamb). Will have to play with this.

Sounds very like the lamb shank recipe I got from my mom a long time ago. Mmmmm! Some fresh lemon zest with the parsley adds a bright touch at the end.

I find that when I'm cooking a dish like this in the crock pot I don't have to actually submerge the meat in the liquid -- as long as I avoid opening the lid while it's cooking, half-covered is plenty, and that way the sauce doesn't need to be reduced.

Plus, if I use enough onion and chop it fine enough before cooking, it mostly melts into the liquid and thickens it nice and smooth. :-)

I would have thought so too, but since some of the meat was submerged and some exposed, we got to taste the difference. The submerged meat was much more succulent and soaked up all the goodness of the cooking liquid.

I did notice the the garlic broke down completely -- I didn't mash it and add it back because there was nothing left to mash!

Lamb is my favorite land meat (I'm a serious carnivore, so I have a favorite in every category), so this is definitely a must-try. I usually just slather it in garlic and throw it under the broiler, so this seems like a nice way to change it up. Can't wait!
