1. With a slew of chopped onions and a bit of salt and pepper.
2. The above ingredients and mustard sauce.
3. With my favorite BBQ sauce.
4. With peppercorns and broken celery stalks--to make a basic chicken broth for soups.

Brined and stuffed with a few herbs, but nothing more.

If you have kids, you can have them do the work of getting the bones out -- that's always the worst part for me, but I'm sure some little kids would find some fun in it. :)

Layer sliced onions, carrotss and potatoes on the bottom. Salt, pepper and garlic powder or minced garlic over each layer. Season the chicken with salt, pepper and garlic and place on top of the veggies. Pour half a cup of chicken broth and a quarter cup of white wine over the chicken. Cook on low for seven hours or so. The meat just falls off the bones.

Variations: Cut a lemon in half; put half the lemon in the cavity of the chicken and squeeze the rest of the juice over the chicken. Or you can use minced ginger instead of garlic, and orange juice instead of white wine.

I don't particularly like straight cooked chicken from the crockpot because half of my love of roast chicken is the crispy delicious skin. That being said, I often crock a whole chicken, shred & pull the meat and use it for recipes that require cooked, shredded chicken. For that, I use Salt, pepper & 1/2 stick of butter in the cavity. And there's usually 2 cups of chicken stock left in the crockpot as well.

i crock a whole chicken with chunked onions, carrots, potatoes with about a cup or so of sherry. Great flavor in meat and shreds up beautifully for rounds 2 & 3 with the bird!
