I used regular white wine vinegar, but I bet the apple one would give it a nice tart taste.

What vinegar is best to use? I love apple cider vinegar, and imagine that'd be wonderful in that! :D

but i worry with the soy sauce - would it be salty ???

The garlic totally overpowers any salt taste that could occur. :D
