Banana Nut Bread

I made this last night. It was done around eleven o'clock, and it was gone within twelve hours, during most of which my hubby and I were asleep. (Hence, the lack of picture-age.) It's moist and dense and so yummy... I couldn't believe it came out of a slow cooker. I plan to try it again today, subbing a can of pumpkin for the banana and adding ( Read more... )

That sounds fantastic- I've been using a crock pot for a million years and still have not used it for baking. Wow! Let us know how the pumpkin substitution works out, would you? YUM

Definitely try it! It's really awesome.
I will--I'll try to post about it tonight or tomorrow, if I get around to making it today. I've got at least six different pumpkin-y dessert things planned for this week. Yay for pumpkins. :D

Kind of. My slow cooker's a 4qt oval, so it was an approximately 2 or 3 inch thick oval with a hump on top.

But, y'know, if you had a loaf pan that would fit inside your crock, it might work to bake something in that. I haven't really looked into the Bread 'N Cake Bake Pan, but since the heat in an oven is indirect, I imagine cooking bread in a pan inside a slow cooker (but for longer because the temperature's lower) would probably work. Another experiment for me to try out sometime (assuming my loaf pan will fit in there)! :D

I'd heard of making cakes (specifically chocolate ones, for some reason--maybe because they're usually less delicate?) in slow cookers before, but when I found the recipes on the Crock Pot website, I *had* to try this.

Really, it's amazing stuff! Let me know if/when you try it out. :D

Wow, this sounds so good! Please let us know how the pumpkin turns out, it sounds delicious. I started googling for bread recipes in the crockpot and could only find recipes for putting the batter in jars or cans with foil in the bottom of the crock. :(

The pumpkin version is "baking" right now. It should be done in either an hour or two (jeez, could they be more vague on the time? :P). The batter was a *lot* thicker with the pumpkin, so I'm not sure how it'll turn out yet. Smells grea, though! :D
