I have a roast w/ carrots, potatoes, onions, and lipton onion mix in mine right now. Just put in on low, leave the house at 730a and when I get home at 530p it will be perfect!

My guess for the "curing" time is that there might be a chemical coating that they put on the crock that's similar (but different) to the coating they put on stainless steel woks. It's there for the crock's protection while it's sitting on the shelf and possibly getting handled by customers.
