I always make a roux first and not make the gravy in the crockpot - just transfer the broth to a bowl and slowly add the roux, whisking like hell. Then you may need to spice it up some more if the flour has diminshed the flavor at all.
You have to cook the flour in a roux to get rid of the icky taste. You could try maybe cooking the roux in a frying pan and then adding it to the broth in the crock? Honestly, I wouldn't recommend it ... you have to get the roux and broth to a fairly high heating point to get it to thicken properly.
