ASPAN



- We are from ASPAN. We have come to this French Bread Fair, bringing ‘multi-cereal’ bread, wawas, quinua bread. We are offering them for people to taste, so that they can also learn about the benefits of these breads.

- Is there a specific part of the country that you’re representing today?

- We represent every bread baker in Peru. We are the Peruvian Association of Bread Bakers.

- When did you start?

- Well, we started to create the Association in 2003, and have been continuously working with all the bread bakers, so that they can use the new technology and deliver a more elaborated product, one that is better.

- And have you noticed a difference in the time the Association has been working?

- Of course, of course. There have been a great improvement, and this fair is great proof of the work that has been done. This is an event organized by the French who live here in Peru, and they’ve invited us and several other entities.

- Very well. Now, from what you’ve brought today, what’s your star product?

- The multi-cereal bread. It’s bread elaborated with linseed, sesame seeds, olive oil, and whole wheat flour. It is really a great bread, which we have been working on along with INEI because it’s a bread that prevents colon cancer.

- And outside the fair, where can we find this bread?

- Well. You can visit our website; there you’ll find all the information about where our products can be found. For example, there’s a bakery with which we’ve been working that is on Melgarejo Av., block 4. There you can find all our products, healthy products made with superior hands - and superior ingredients, of course.

OXAPAMPA BREADS



- We have come from Oxapampa, representing the austro-german community. We have brought artisan-made breads based in native produce such as yucca, pituca, arracacha… Then we also have the austro-german breads. They are customs from our ancestors, these breads that are eaten at a good breakfast, or at lunch.

- Very well. How long have you been in the bread baking business?

- We have been participating in national and international events for ten years already. The last four, I’ve participated at Mistura, as a Emblematic Teacher. Now I have been invited by the French Union to this nice event.

- And what’s your star product? Because I can see you have a lot variety.

- The one for which people asks the most is the ‘pachamanca bread’. But in the end everything sells out, thank God.

- So what’s so good about the ‘pachamanca bread’, that people love it so much?

- Well, it has a ‘pachamanca’ seasoning: it has ‘chincho’, garlic, pepper, hot pepper…. And everything is mixed into a salty dough. What comes out is a delicious bread that tastes like pachamanca.

- And that purple one over there… what is it?

- That one is ‘purple corn’ bread. Very nutritious. Also, we have quinua bread, that is also great; we have used 60% quinua in it, so that it really will be a nutritious bread.

- Interesting. And where can we find these treats in Lima?

- At different events which will count with our participation, all over the country. They have been inviting us more often because people like our products. Furthermore, we make a difference in which we do not use anything that would endanger people’s health, such as bromate and any preservatives. We only use flour, butter, eggs, milk, and the additional ingredient which would be the yucca, pituca, arracacha, or banana.

- And if someone feels like having one of these breads any weekend, where would we have to go to find them?

- It is a great shame that we cannot bring these breads in smaller quantities, only for events. Today, for example, we have prepared 15 000 pieces of bread, and it is worth it, because they are in demand here. In smaller quantities, it would be more difficult - unless you would come visit to Oxapampa, and there we can wait on you in person.

- How long is it from Lima to Oxapampa?

- It’s a 10-hour trip on bus. And there are beautiful places, very welcoming; a lovely tourism destination with beautiful sights, very good lodgings, and veeeery good food. That’s Oxampampa. Visit us; we’ll be waiting for you all year long.
