By slipping the stitch they're avoiding the upward spiral look which amigurumi usually has. I'm a bit of an experimenter with ami patterns and usually ignore the slip stitches, just doing it in the round like I would normal amigurumi.

For the first pattern you could probably just do the fins separately and then sew them on later.

I don't think I have any patterns for squid hanging around or I'd offer one of those, but hopefully this helps ^^;
