The healthy intent sounded good. One question... how were you going to consume the okra? I always disliked it (except breaded/fried) until I started eating Indian food (I love Inian okra) - but I have never thought of it as being simultaneously edible and healthy.

When I first bought some Thursday before last I was going to a friend's house that night and called him to ask if he liked okra. It turns out not so much, but he felt like enabling me to buy what I was evidently excited by, and told me to buy it. He cut it into maybe 1/4 inch rounds and fried it without breading in olive oil and a LOT of garlic. Was a finger-food side dish (for some concept of fingerfood) with our dinner, and he packed the rest in a container with paper towels inside and I would have a few at a time as a snack for the next week.
need to fry more, but that requrires being home to cook.
