wait, you said you'd never use the panini plates and then *immediately* mentioned making a sandwich. confused! not that waffle-grilled sandwiches aren't bomb, because they are (even though waffle house stopped serving them, the jerks).

Intriguing idea, but no.

The old grill had a set of reversible waffle + flat plates.

New grill has a set of panini plates (with ridges), and a set of flat plates.

I prefer the flat plates for sandwiches. The ridged panini plates tend to destroy bread, and result in unevenly melted cheese, and an altogether inferior sandwich experience.

I still have my old one which is about 30 years old. Maybe I should just retire it safety reasons. I bought a George Foreman grill but I agree the flat iron one is better for sandwiches.
