Green Chile Goodness!

I found Bueno Green Chile Enchiladas in the frozen food section of Safeway!!

Bueno sells processed frozen green and red chili in the freezer section - we buy the green often when the fresh doesn't look good or Yoda doesn't want to roast it. I LOVE enchilada...and just like the back of the box, that was my choice for birthday dinner. Except my the EOW's family tradition is red flat stacked enchilada, kind of shy on the cheese. I didn't encounter green enchiladas until I was an adult. I've never eaten a frozen enchilada, either style. The opposite for tamales - she made both, but we love the green corn variety.

Funny how we're all so wedded to the food we grew up with ;-) The sad part is that even though I spent most of my life in New Mexico, eating New Mexican food - I never learned how to make it well. My son and I have come up with a passable recipe for Green Chile Chicken Enchiladas, but these frozen ones were pretty damn tasty. I know about the frozen tubs of Bueno, but was pleased to find their prepared foods are yummy too.
