I have to say, they're pretty good! Although, I think when I make them again I'm going to try adding a little nutmeg and see how that turns out.

Oooo, I want to try these, but, saddly, I don't have any muffin tins. I don't sappose you have any thoughts on adjusting the oven time if I make it as a cake...

I think you could probably make it as a cake and time it around 30-35 minutes. I'd just watch it closely! Also, you might want to monkey with the oven temp...maybe 350F?
