I've had quark head since the weekend (I'm sure that makes a funny mental image). If I am correct about it, one starts it with previous quark. Does it taste like skyr? What is the lactobacillus in skyr? Edelweiss deli carries quark - a side by side taste test might be in order unless you already know!

The quark I've had (from New Seasons) is less sour than skyr.

The Trader Joe's skyr I tried was one sour dawg, tangy tart, not unpleasing tho. I seem to like a sour cream range of tangy/sour in my dairy as a personal preference.

thanks for posting this... I was going to ask when I read the other post as I don't get CA anymore... I think I will head on over to Whole Foods this eve and see if they have the Icelandic Skyr. Having never ever had any skyr, this could be the beginning of something great, or one of those experiments that you chalk up to life experience and learn a lesson from.
I am really hoping that I like it, as I would love to have more things to spend my time doing apparently... hee hee.
