I read Wolf at the Door awhile ago, and enjoyed it quite a bit. It was my first Datlow/Windling book though, so I don't know if I would like it as much if I read it after some of the others. Also, I'm excited with anything that is a retold Fairy Tale, even the mostly bad Once Upon A Time series... Have your read any of the other Datlow and Windling books? They're hard to find (not in bookstores at all, I get them used online), but they're pretty good. A lot darker, and less YA centric.
I'm currently reading Rose Daughter, by Robin McKinley, which I'm liking quite a bit, but probably not as much as I liked Beauty.
Okay, now that I have slightly recovered, yes, I've read several of the Datlow-Windling anthologies and I thought this among the weakest. I've got most of the retold fairy tale anthologies (Snow White, Blood Red, etc.), as well as a full run of their Year's Best Fantasy and Horror anthologies.
I liked Beauty a lot, but enjoyed Rose Daughter as well. McKinley's Deerskin is very much darker and disturbing in tone, but then it's subject matter is also very dark.
Have you ever read Orson Scott Card's Enchantment? I very much enjoyed it's take on Russian fairy tale stuff. I also highly recommend the comic Fables which is based on all kinds of fairy tales.

I found my copy the other day, and I think I'll reread it just to compare. It's been awhile since I've looked at it. If I recall, it's a little more childrens book-y than the others... I have most of the fairy tales antologies, and the two other fairy tale anthologies they have (faery reel, and the green man), but none of the fantasy/horror anthologies. I should read those!
Rose Daughter is lovely, definitely more refined than Beauty. It reminds me a good deal of Spindle's End, sorta bittersweet. I keep wanting to read Deerskin, but haven't yet. I shoudl though, it sounds amazing based on the description (which reminds me heavily of Anne Sexton's Transformations poems).
I haven't read that one either, but again, the description looks fantastic! I need to go book shopping soon!
Oh, one of my favorite retellings; Wildwood Dancing, which is a mix between the 12 dancing princesses, and the frog prince. Plus, it takes place in Romania, which is one of my
