Happy to help with the resume, but not familiar with the south. Appealing unemployment is usually fairly standard, and if they said they were laying you off, then it's straight forward. I hope you have something in writing?

A wrongful termination suit is difficult to prove unless you were discriminated against or harrassed. Laid off for any reason (except being in a protected class) is at the discretion of the employer unless you're in a union.
