Mostly because "Liz and Dick" were the names that the tabloid media used for she and Richard, who constantly sensationalized their lives with derogatory headlines (see the magazine cover near the top where they denounce her immorality) to sell papers and appeal to the housewives who loathed her. The nickname was a symbol of the villainess they tried to turn her into (even when she "stole" Eddie Fisher away from Debbie Reynolds, she was the evil homewrecker and Eddie couldn't possibly be blamed for falling prey to the wiles of a deviless~) and it carried that connotation forever.
