green beans and gnocchi w/sun dried tomatoes

gawd this was good....



soooo fast & easy... maybe 15 minutes with prep. serves about 3.
  • 3/4 - 1 lb fresh green beans
  • 1 lb potato gnocchi (this is probably not vegan --eggs i think--, but you could maybe make your own in advance?)
  • 1/4 c. sun-dried tomatoes (the kind packed in oil)
  • 3 cloves garlic, crushed
  • 2tbs butter (could substitute vegan margarine or just leave out for non-dairy eaters... i just like the richness)
  • olive oil
  • salt & pepper

put a large pot of water on to boil.
while that is heating, wash & trim your green beans.
salt the boiling water & toss in the beans to cook for about 5 minutes.
while the beans are cooking, squish (technical, aren't i?) the oil out of your tomatoes & chop into small bits.
when 5 minutes are up, toss in your gnocchi.
allow that to boil gently for about 2 or 3 minutes until the gnocchi floats.
drain & put into heat-proof bowl (or back in the pot like me! hehe).
toss in tomatoes, butter, garlic, & just enough olive oil to dress it without getting drippy.
salt & pepper to taste.

plate & enjoy, yum yum!
