Root vegetable stew -ish thing

Since moving back to uni this year I've decided to try and have a much healthier diet than I did last year (when I could eat pasta and pesto for three meals in a row very easily). So using some of the vegetables I had left in the cupboard/fridge yesterday, I made this (my recipe since I made it up as I went along :P):

Ingredients:

beans, tomatoes, recipe, potatoes, stew, vegetarian, college student, quick/easy/cheap/college, potatoes: sweet potatoes/yams, squash, carrots

I make a dish like that fairly often. It's easy & cheap. :)

Try adding a tablespoon or so of curry powder when you are frying the onion and garlic for a nice variation.

Hi, hope you don't mind me offering a tip as my first post in this community! If the soup is a little watery, there are two simple things you can do, one is to mix a teaspoon of organic cornflour in a few spoons of water and stir in. The other is to take about a third of the soup out and liquidize it, then stir it back into the lumpy broth. I like both ways, depends how I feel! I make a similar soup, but without the soy sauce and a teaspoon of dried chillis. I like a bit of spice! Lol x
