"Not-sagna" recipe

Not-sagnaThis is a dish that I invented out of sheer boredom about two weeks ago. It's a layered dish made in a loaf pan with layers of rice, tomato sauce, black beans, polenta, and cheese. Originally I used lentils, but tried it the second time with black beans to give it a more Mexican feel. I prefer it with black beans, but they were both good! ( Read more... )

This is the kind of thing my mom makes when I go home, and I always think, THIS IS SO GOOD! I SHOULD MAKE THIS!

I definitely will plan to make this one soon! I might try using peach salsa in lieu of tomato sauce. Do you think that would taste okay, or would it make it weird?

Honestly, I'm not sure how that would taste. I'm not a huge fan of fruit salsas, so I personally wouldn't try it. I also don't usually cook with salsa, so I don't know how salsa behaves when it's cooked.

I might recommend making this with the tomato sauce and then adding the salsa with it when you serve it. That would give you an idea of how it would taste with the salsa, and then you can tweak the recipe however you like.
