Sounds delicious, but I'm not quite sure how this qualifies as a mole per se, as opposed to a rice and bean dish that incorporates a mole. I'm not that well versed in Latin cuisine, though, so I might be missing something. I thought mole was basically a sauce.

the mole is the recipe. The rice is a suggested bed to put it on. You're right, actually. The mole is the sauce. I never cook the rice in the sauce, I just use a bit of the leftover broth to make it.

This sounds really tasty! I hadn't considered using a mole type sauce with beans- I bet it would make a nice chili too!
