No. These rise up quite a bit. The one in the picture was the last muffin out of the batch and had less batter than the rest. I filled most a little over 1/2 way, and they rose almost too much.
Maybe, but mine came out nice and fluffy. I suppose some of the sour cream could be replaced with egg if you wanted. And I'd add sugar to the cream cheese mix. I feel like adding fruit to it would defeat the point of having a cream cheese swirl in a berry muffin. But I'm hardcore about my cream cheese. I think cream cheese frosting should just be whipped cream cheese.
