My Dad is flatly refusing to cook me vegan food. But he acts insulted when I take my own food over to his house. Do you have any recipes for something simple and easy to make that meat-eaters are likely to enjoy too? Could really do with some suggestions :-S

Well, there's always something like spaghetti, maybe? Or a hearty rice and bean dish?

guacamole for an appetizer is always a hit with my non-veg friends. as mentioned, pasta or rice dishes are great. and stir fry is always good too. you can cook some tofu or meat substitute in a separate pan and the meat eaters can cook their meat in a separate pan, and then both join up with some veggies in a stir fry. perfection!

I'd also go with the pasta suggestion.
also, there's always things like cupcakes.not really a 'dish' but still a good way of making it clear that vegan =/ nasty ;)

I personally wouldn't make anything that is a 'typically served with meat' deals, as that would just further the opinion of vegans always 'substituting', and that can be quite annoying after a while... to me, at least.

the idea I've just had when I read your topic was some curry. with pineapples and things like that. my dad loves it, even though he is usually really 'distant' to my cooking (he's not openly against my veganness, he just 'politely' declines everything I offer...)

also 'easy' without people automatically noticing that it's vegan would be stuff like baked potatoes with broccoli(or other) and for example some garlic souce :)

I agree with the sweets/cupcakes suggestion. My aunt took my mom and I to a vegan bakery, and my mom(who is omni and thinks most vegan food is "rocks and sticks" among other things) was blown away by how good the "cream" pies and cookies were.

Does he like Indian food? Making something like channa masala is not very hard, and it's really delicious, at least for people who like spicy food.

I've noticed that objections like your Dad's are really about culture. Food is such a big part of who we are, that people (like my Mom) take it as an insult that you're not sitting down eating Grandma's Famous whatever recipe like everyone else.

My Mom outright refuses to cook anything outside her comfort zone ... except that when she's making Grandma's Famous Boston Baked Beans, and I say "hey, can you make some with out the pork" she's more than happy to. Or at Thanksgiving when I said "could you make me some stuffing on the side with veggie broth" she was thrilled. It was important to her that we all sat down to eat the same meal (well, not exactly the same, but you get the point).

So, I have no recipes to suggest except those that are already near and dear to your family that you can veganize.
