I've made the saitan from veg'con, but I prefer the one in vwav. It's not that time consuming, most of the time is it boiling on the stove. You don't have to do much after mixing all the ingredients together.
I've frozen seitan in its broth, and I have frozen tofu both unopened in its original container, and post-pressing, and it doesn't seem to make a difference for me.
