I usually mostly frequent chains in Long Beach, because there isn't much info online about the local places, and I don't live there, I go to visit family. (Romano's Macaroni Grill, Baja Fresh, Pick Up Stix, Chipotle, Souplantation). The Whole Foods by the marina (Near 2nd Street on Pacific Coast Highway) has vegan pizza sometimes, and there's a farmer's market that is just fantastic there on Sunday mornings. Also a TJ's within walking distance of the same park point.
I do know that Katella Deli (on, surprise, Katella) has awesome baked potatoes with steamed veggies that a little BYO tofutti sour cream makes into a delicious dinner. My family loves that restaurant, but they are not very vegan friendly at all. Great for L-O veggies (sigh).

We also wanted to go to a place called Good Mood Food cafe in Huntington Beach, but it took us too long to find it, and by the time we got there it was closed. The menu sounded amazing though.

oh man! the "meaty" balls they use for orange chicken and sweet and sour are so cripsy and great!
and the bus system there is way better than in phoenix, and shouldn't be a problem. when i was in high school, we used to take a bus down to the beach all the time. have fun!
