I think that you only have a wedding once. (hopefully lol) And it should be up to you and your fiance, no one else. I think maybe you could have half the things on the menu vegan and half not. I just think its really unfair for you.
Your family and friends should eat some vegan food for a day, it wont kill them.
i cook myself a vegan feast every thanksgiving, and try to think of the fanciest things i can. it helps to look through cookbooks, one of my favorites being Vegan Gourmet. You can give recipes to the caterer, i guess. here's a few of my faves:
red lentil pate stuffed mushrooms rice pea and mushroom soup asparagus orange soup baked acorn squash with maple pecan glaze garlic mashed potatoes gnocchi or just think of your favorite fancy regular foods and find a recipe.
and for goodness sake get a vegan wedding cake! make that your one demand. don't feel like you're being a bridezilla just because you're a vegan. if the bride was allergic to dairy, no one would dream of not allowing you to eat your own cake. being vegan as a value should be just as important as if you couldn't help it. (btw, the vegan lunchbox blog has a great fluffy white cupcake recipe that doubles beautifully as a fancy white cake.)
Personally I'm a big pasta girl so I'd probably ask for pasta and lots of steamed veggies/an awesome salad and maybe a fresh fruit bowl??? Man........ now I want that right now.
