my b-day is in a few days and my mom wants to make me a cake, she usualy makes the kind from the box. which requires eggs and i am pretty sure milk. are there good substatutes for those things? or do i get to watch eeryone eat my cake for me? :/

make your own cake? that's what i always do. most people end up eating mine anyway.

*substitutes
well. 1/2 smashed banana= 1 egg.
also 3 tablespoons flaxseed mixture (1/3 cup flaxseed ground to meal + 1 cup water until smoothie consistency-makes 6 "eggs")= 1 egg.
1/4 cup applesauce= 1 egg.
2 oz blended tofu= 1 egg.
also storebought (ener-g) egg replacer.
as far as milk...uh... soy milk? or...rice milk.

if you do the applesauce or banana route add 1/2 teaspoon baking powder per egg, helps with leavening and sych.

and i have made box mix cakes in the past (just check the ingriedients) with applesauce as the egg replacer, they turn out a bit crumbly but they still are tasty. Also if you're mom does'nt like to make frosting, some of the store bought ones are vegan, you just need to look. Or if your mom likes to make cakes from scratch she can just adapt her normal buttercream frosting with vegan margarine, and soymilk for the dairy ingridients.

I have seen posts in this community previously where people have used applesauce, corn starch or mashed bananas to replace eggs with boxed cake mix recipes, and they have worked out well.

Be careful, some box mixes already have eggs and milk in them, so double check to make sure that's not in the powder already... There are mixes that don't have them too, you just have to make sure you pick up the right kind =}

i believe duncan hines box mixes are vegan, and she can just use egg replacer. usually they don't require milk (though that's easily replaced with soy milk).. they usually just need oil, water, and egg replacer.

yeah, MOST dunkin hines boxes are vegan. still check the ingredients. a couple of em have dairy in em. you don't need to add milk ( ... )

and by "egg replacer," i mean Ener-G Egg Replacer which you get in a yellow box in the baking aisle at your health food store.
