If you like lentils, this is really yummy.
2 Tabsp. Olive Oil
1 large onion, chopped
1 shallot, chopped
2 cloves garlic, minced
3 carrots, sliced
1 cup dry lentils
2 cups water or vegie broth
1 tesp. marjarom
salt/pepper to taste
Heat the oil in a pot. Add the onions and shallots. Satue about 8 minutes. Add the garlic and carrots. Satue a couple of minutes. Add the lentils and water or broth. Cover and simmer until lentils are tender. Add the seasonings, uncover and cook until most of the liquid has evaporated.
