Gluten free vegan Chinese dumplings

I made dumplings! I have been missing these delightful little parcels of tastiness since finding out I am wheat intolerant, I used to regularly make a vegetarian version with the store bought gow gee wrappers. Thanks for this! I don't need to be gluten-free, but I haven't been really satisfied with any vegetable dumpling filling I've tried to make. This looks nice and varied with the right flavors.

these look sooooo good... and they appear to be low fat. which is good for me because i can't eat hardly any fat due to a stomach condition. thanks!
