Potato-based vegan "Gruyère" sauce

I was never a big cheese fan even before I cut dairy out of my diet, but one of the few cheeses I really miss is Gruyère. It's creamy and nutty and earthy and rich and I used to use it for basically everything. Even soy based cheese has very little protein fwiw. :) This is brilliant! Thanks for sharing it! I'm psyched to try.

Roasted potatoes on pizza is sooooooooo good. There's a pizza joint in the bay area that does it back in my gluten eating days. Sometimes I do it at home when I make my own :)

Potatoes+nutmeg sounds like a fantastic cheese sub. I love potato pizza too. I'm saving this to memories.
