Veganizing Lemon Curd - Finally!

Hello vegan crowd,

It has been ages since I posted on here, I know. But for the past week I have been wondering how to vegan-ize one of my favorite desserts ever: lemon curd.

Looks nice--I do love and miss lemon curd. I would probably add a little fat in the form of non-butter or coconut cream/oil.

I'm a big fan of Bryanna Clark Grogan's parsnip-based version. The omnivores of the family like it a lot, too.
