I've made the recipe a couple of different ways (various combinations, according to what I had on hand), and they have consistently turned out aMAZing :).
Soluble fibre is usually the key for bowel issues (which is a completely different thing to insoluble fibre). That means things like root or starchy vegetables - potatoes, sweet potatoes, squash, carrots, parsnips - all with the skins removed. You can roast some combination of the above with a little drizzle of olive oil and rosemary, that's tasty. White rice, oats (if oats are GF?) and bananas are also good. You could try risotto, e.g. mushroom (made without butter or cream, obviously). Or, it's a bit of a faff to make, but vegan sushi (fill with avocado or cooked sweet potato or mushroom) might be quite good, as it's based on rice. Also various types of vegetable stews. I know you're on quite a restricted list of ingredients but you could vary the herbs and spices to get completely different tastes.
I had some issues with indigestion recently and had to cut back on eating so many raw nuts and eating brown rice, etc. I've just switched to white rice for now, and I do eat some nut butter (mostly pb), but no more raw almonds for me for awhile. Good luck, you two.
