I get to bring the greens to Thanksgiving and I have no clue what kind of recipe to use. There will be a few veg*ns at Thanksgiving dinner, but it's mostly people who put bacon on birthday cakes. I'm hoping for something a little more flashy than plain sauteed kale but still recognizable as food to the bacon-cake people.

This all helps soften the raw kale enough that it's yummy but does not destroy the awesome raw goodness of it. I've made this recipe before with lots of success. Hell, my 2.5 year old loves this! He'll eat bowlfuls of the stuff. How many toddlers do you know that love raw kale? :-)
I've also tried adding raw cabbage and raw shredded beets to this salad as well with great success. The cabbage and the beets add some great colour as well.
