My mum and I made safra, a date & spice cake from Libya recently. It is pretty much one of my favouritest sweet things ever. Mejdool dates! Oh! Come to my arms!

Let the cake sit for at least 6 hours before eating.

That's probably the most difficult part of this recipe! :)

Heh, it truly is - but the syrup takes a while to totally soak in. It does, however, make it squishy & delicious for days & weeks to come :)

Mmmm...Medjool dates. We got a huge box in at work last year one time and my boss let me take most of them home. It was heavenly.

Score! I like eating them with an almond or walnut wrapped up inside. Some places in the Mid East I've been able to pick them off the tree, sun dried!

Those look like Marcona almonds, too! That cakes look yummy AND expensive. Mmm...

What size cake tin is this recipe for?

Yeah, that's why cooking with Mum was good - she paid for all the dates! :)

The recipe is for a giant sized cake tin, more like an oven dish honestly. For an average-sized cake tin you can halve the ingredients - what we did this time.
