Looks delicious! Roasted sweet potato and black beans is a favorite combo of mine. I especially like it when the black beans are seasoned with chipotle peppers in adobo.

It's a hit with me, too. I love sweet potatoes in anything! And cumin is my favorite spice of all time, so this recipe was perfect.

Chipotle peppers in adobo sounds like a delicious addition!

I agree! Just grinding cumin makes me salivate. Haha, I'm salivating now just THINKING about it! It goes so great with sweet potoatoes and black beans.

Thank you for the recipes. I've been wanting a simple cabbage slaw that would go well with my black bean and sweet potato taquitos, but I haven't done any experimentation yet. Yours looks like a delicious startin point!

I really enjoyed it -- it packed a lot of flavor for so few ingredients! I wish I'd shredded my cabbage finer, but the lime/cilantro mix was the perfect tang in the taco :)
