I'm so jealous of you right now, this year my mother couldn't find any pattypan squashes in her home town's market when she went there for a visit and there's never any here locally. Oh, and I just asked her, my mother I mean, and she said that like any other kind of squashes they're best picked before they get too ripe -- skin goes white, seeds get big tough, the skin is not as gingerly as while young; if you've ever left a few zucchinis get old(ish) before picking you should be familiar with the symptoms -- simply because there's less seeds and the "meat" is not as tough. It doesn't really depend on size, as a smaller one can ripen faster than its bigger brother and so on ( ... )
