Amazing mac 'n' "cheese" with no nooch or tofu!

I'm not a big fan of nutritional yeast or tofu, so I was thrilled to find this pasta casserole recipe in VegNews. It's creamy and savory and orangey-yellow (yay carotene) and delicious. Mmmm that sounds really good! Although i will probably add nooch to it anyway, because we are in love and cannot stand being parted :P.

I'll prolly use tahini instead of marg too, love it for creaminess in these kind of recipes :).

p.s i am SO going to fail at step 5.5, i can tell already :P.

I've made this recipe from VegNews a couple of times; though I didn't have any nutritional yeast so I skipped it, and used onions instead of shallots. (I also used olive oil instead of margarine to try to keep it at least somewhat healthy, as creamable cooked veggies aren't really full of vitamins.) My brother really liked the first batch; for me it was OK, but for a European it was nothing like any kind of pasta and cheese I ever ate or imagined. To me it was/is pasta and creamed vegetables, with some flavor - most of it from the mustard and spices. (I didn't overspice as my brother likes things mild, and this dish can absorb spices like anything.) The breadcrumbs on top were an o.O of extra carbs on a dish consisting mainly of pasta and potatoes ( ... )
