Minimalist Pasta with Broccoli

This recipe, from Mark Bittman's How to Cook Everything app*, has been a staple for me lately. It's supersimple and tastes like more than the sum of its parts. This is great comfort food. I'd rather have this than any kind of mac and cheese. It also keeps and reheats well (add a little water), although it never lasts long in my fridge ( Read more... )

I am so excited to make this, especially when the farmer's markets come out with rabe etc in the summer (where I live). Thanks for sharing! I've heard that a lot of his veg recipes are totally worthwhile.

Yeah, I love Mark Bittman. The app has a lot of great veg recipes, even if they are a bit hard to find and overshadowed (in user favorites, menus, etc.) by meatier things.

YUM. My non-vegan family ate this at least once a week my entire childhood. You'd think I'd be sick of it or associate it with being dirt poor, but broccoli is just so awesome. I want some now.

I'd never heard of it before, but it makes sense that it would be a classic.

You know what I'd bet would be good with this? Some crushed hot pepper flakes.

why do we have to keep the broccoli water boiling, and what do we do with the reserved cup of pasta water?

you keep the broccoli water boiling so you can boil the pasta in it, and the reserved cup of water is to add as needed, as the op states in step 3. because the broccoli and pasta have both been cooked in it and because it stays on the boil for a while, the amount of water reduces and becomes a bit thick and starchy, and full of flavor and vitamins. when added in the final step, it blends with the garlicky oil and makes a kind of sauce.
