Help with Weekly Meals

On Sundays, my husband and I cook our meals for the week. We usually cook one-pot wonders, casseroles and/or soups/stews. We have also done burritos in bulk and freezed them and this has worked pretty well. We try to do more than one a week so that we have some variety. A lot of our meals end up being tomato-based which is usually not a problem. ( Read more... )

interestingly, i too found the 'mac daddy' recipe from veganomicon to be an epic fail. as in, i actually threw up after eating it! Otherwise I love that book.
I would recommend her new book, Appetite for Reduction. It's kindof unfortunate that the title emphasizes weightloss, bc it's really a collection of fast and easy meals. From Veganomicon, since you have it, i loved the black eyed pea roll ups, chickpea cutlets, which reheat well, kale and potato enchiladas (ZOMG YUM), white bean cassoulet, rustic white beans, off the top of my head. From ffvegan, i used to make the polenta and kale lasagna (no tomato) which i bet would freeze well. I am a sunday cooker too, and those are all things i've reheated through the week.

I've actually made the polenta lasagna from FFVegan! However, I didn't use the kale and mushroom filling instead I did a more traditional tomato-based one and while I liked it my husband was not really into it. I tried making polenta lasagna a few months ago with butternut squash instead and in what should have been super tasty (butternut squash + polenta = win) ended in a total failure that has gone down in our books as one of the biggest kitchen fails ever.

I've heard the chickpea cutlets are really good but my husband is wary of fake meats (he's an omni and likes his meat) and I think the kale and potato enchiladas might be too harsh on my stomach right now. I'll definitely consider the white bean cassoulet though! That sounds really similar to what we already do but it sounds delicious just the same!

I love the strata from Veganomicon, and it freezes well. I always mess around with different vegetables and seasonings for some added variety, but the basic concept works great for meals to heat up. The one tweak I would make (both for taste and for your stomach) is reducing the lemon juice in it. I find the finished results a little more tart than I want them to be.

I liked the pumpkin baked ziti from Veganomicon, which should last two people a few days. Also there is a chickpea/dill/rice thing that is fantastic and keeps well. (I also love the lasagna recipe from V'con, but am not sure how good it would be minus the tomato sauce!) I've only tried three recipes so far from Vegan Table, and the only one I would make again was the mac and cheese. (The other two were a tempeh sandwich filling, which was OK, and the black bean soup, which was terrible.)
