Mock pecan pie egg replacer?

I was reading through my friends page today and someone was looking for a mock apple pie recipe. I remember making one in High School with Ritz crackers and it was strange and tasted like apple pie. hmmm. in this application it seems like tofu might be the best? (with a bit of a binder to congeal it once baked?) i'd think tapioca flour might be a good candidate. maybe a tbsp?
(a cup of tofu to take the place of the 4 eggs. i'd do silken for sure.)

Pecan pie was my favorite. I recently had some vegan pecan pie in a restaurant and it was really terrible. :(

I would love a great vegan recipe, too.

Yeah, it was my favorite too, but I have to wonder if after all these years I'd still like it, or if it's just the memory I'm hanging on to. Now sometimes I try something and I feel like it's just way too rich because my tastes have changed. And I think Pecan pie is a super-rich dessert?

Here's a mock pecan pie recipe I made once and liked. It's got real pecans in it, though! It's from Ann Jackson's "Cookin' Southern Vegetarian Style."

Crush and Run Mock Pecan Pie

Egg replacer equal to 3 eggs (Try the flaxseed version on p. 11*)
1 cup sugar
24 Ritz crackers, completely crushed until very fine (Use a food processor, rolling pin, or tire wheels--whatever works for you.)
2 cups pecans
1 teaspoon vanilla

Preheat the oven to 350F. Mis the egg replacer with the sugar. In another bowl, mix the cracker crumbs, pecans and vanilla, then combine both mixtures together well. Bake in a 9 x 13-inch baking dish or 2 small pie plates for 25-30 minutes. Top with soy ice cream!

* 3 Tbsp. ground flaxseed combined with 1/2 cup cold water. This equals 2 large eggs.

I would go with something like this, with a buttery-sweet base thickened with cornstarch. I don't think the flavor of tofu or flax would go well or be easy to mask.
