peanut butter cupcakes

It's my almost-veg coworker's last day today, and I'd like to bake her some cupcakes as a goodbye present. As we've bonded over our love of peanut butter in the past, I'm going to make the Peanut Butter Cupcakes from Vegan Cupcakes Take Over the World. I'm probably too late since you were going to make them today, but I would replace it with either 2 tsp of chia seeds or 1 tsp of an egg replacer like Ener-G.

I just replaced it with Graham flour. Worked fine, gave a slightly different texture but it was tasty.

In cupcakes I almost never use a strict egg replacer - I would be inclined to just omit it entirely and make sure I had enough liquid (soy milk etc).
