baking with tea?

I'm looking into experimenting with making cake with tea. specifically, I want to make a jasmine green tea cake with coconut frosting (also, poll, does that sound awesome or terrible?)
has anyone had any luck with baking with tea? how do you recommend going about it? any recipes you'd like to share?

I haven't baked with tea, but I've cooked with it. I like to boil my rice in an orange sunset tea and then make it into breakfast rice or puddings and such. It adds a really nice nuance to the flavor of the rice.

Also, the frosted cake sounds like an AWESOME idea.

I used to bake cupcakes at a bakery. We'd have a stock vanilla cake recipe to which we could do whatever we wanted. Tea cupcakes were one of my big hits. I basically just used a spice grinder to pulverize the tea and added it into the batter. I did it with earl grey and made an orange frosting and did it with chai and made a vanilla frosting. I would say I used about a heaping tablespoon of pulverized tea to a batch of 12 huge cupcakes. :)

Yes, jasmine green tea with coconut sounds awesome. I've been wanting to get my hands on some good matcha for baking!

I've had it bookmarked for years, and whenever I look I'm surprised at how many recipes they've gathered. Quite amazing.

That sounds quite nice but I think it needs something a bit fruity in there - banana, raisins, something.
