Jello Pumpkin Spice Recipe

I bought a few boxes of this because I read that it is vegan as long as I make it with it with a non-dairy milk/tofu/avocado/whatever. The thing is...I don't really want pudding or pie. I know, it sounds silly because thats the purpose of it, but does anyone have any other ideas that I can try? Maybe like a bread, cake or cookie?

Ingredients
Sugar, Modified Food Starch Contains Less than 2% of Natural and Artificial Flavor, Cinnamon, Ginger, Salt, Disodium Phosphate and Tetrasodium Pyrophosphate (for Thickening), Mono- and Diglycerides (Prevent Foaming), Yellow 5, Yellow 6, Caramel Color, Artificial Color, BHA (Preservative).

Id say that you really can only make pudding or pie filling. Adding that into a flour mix and then adding wet (earth balance, egg re placer etc) will activate it into goo. You could try using only half of the mix and add it into a cake mix that didnt have pudding in it already. or make a cake from scratch and relize that your going to have to compensate for they extra wet thats going to happen.

Make a pumpkin bread with less oil and Egg replacer?

Icebox cake. You make the standard yellow cake of your choosing, but in a rectangular cake pan rather than round pans for a layer cake. After the cake cooks, take a skewer or fork and punch holes (many of them) in the top of the cake (leave the cake *in* the pan. No removing the cake from the pan).

Make the jello mix as directed, then pour over the cake, cover, and put into the refrigerator. In a few hours, the cake absorbs the liquid and gives you a really moist cake. You can do this with pudding as well, you just need to make larger holes in the cake, using the round end of a wooden spoon works well for this.

Icebox cake, like the person above commented, used to be something my dad made all the time and it was pretty good!

Otherwise, I have a recipe for a pumpkin spice rum cake that uses that Jello flavor if you're interested.
