Latkes

Does anyone have an good recipe for gluten-free latkes? I've found a few so far, but I'd like to hear from someone who's made them. Or if you've made non-GF latkes and have a good recipe, would it be safe to assume that just making them with GF flour or cornstarch would do the trick? No, an egg cannot be added because the OP is a vegan and this is a vegan community. Do not mention animal products in this community.

Ugh, I'm sorry you've gotten people mentioning eggs. =(

I guess I haven't really had ~real~ latkes, but I've made them a few times.

I always make sure to squeeze the grated potatoes out reeeeeallly well because otherwise they just become mush. For a binder, I'd go with either potato starch, tapioca flour or rice flour (and hey, store-bought egg replacers seem to be mostly rice flour anyway) as they are pretty tasteless. I'd think chickpea flour would be too strong a taste.

To hazard a guess, I'd probably say about... 2 tablespoons flour to roughly 750g potatoes, but I always just see how well they stay together and add more if I think it needs it. Recipes shmecipes.

I posted a really good recipe here, adapted from The Voluptuous Vegan. You should be able to find it in the tags or memories. Instead of eggs, you drain and add back in the potato starch. It works really well.

I'd try it with g/f flour....just add the minimum you need to hold it together in case it does something weird!

Oh, here it is. What I would do is omit the soy milk (not sure what the point of that is, anyway) and use less g/f flour ( ... )
