Argentinian/Vegan/Thanksgiving Fusion

I'm making food for my Spanish literature class next Tuesday, and I decided that I'm going to make food for everyone. I figured it should be something Argentinian, since we're studying a lot of Argentinian literature right now. However, it's also right before Thanksgiving, and I'm also vegan. Mod note - The thanksgiving one was already there so that one stuck, but we have it set so that only mods can make new tags, so the Argentinian one didn't stick. I added Latin American for you, though. :]

hm. i lived in argentina for a while and vegan food is scarce, but not non-existent. i would say some sort of pasta would be your best bet. gnocchi is super popular there, so maybe you could do like...squash or pumpkin gnocchi? with a tomato based sauce like fileto (which is just basic tomato) or maybe like...al verdeo (with green onions). a lot of pasta there is made with egg but my mom never ever makes hers with egg, thus is vegan and completely delicious. i usually make gnocchi with my mom and we eyeball it, but i know there's a gnocchi recipe in vegan with a vengeance that i tried once and it came out pretty well. its a little labor intensive and you'll have to figure out how to sub in the squash/pumpkin, but i don't think it would be too difficult ( ... )

Wow! Empanadas are a great idea! I definitely was looking at empanada recipes when I was Googling Argentinian vegan food, but I didn't even think about all of the creative things that they can be stuffed with! Awesome!

thirding empanadas, my family is from Argentina and they are THE biggest thing. (along with asados and dulce de leche, but those are harder to veganize, heh)

I would check out some cookbooks on Argentinian food at your library and then try to veganize them, at least for ideas if not the actual recipes. That might help direct your search better elsewhere.

Everyone mentioned empanadas, which would have been my first choice for thanksgiving. Another common filling is like creamed corn, or spinach & mushroom.
But since I'm here I'm gonna give you the recipes of my fav Argie food - types of pizza which are traditionally veg and without cheese - pizza de cancha, fugazza and fainá. I love them so I'm gonna type it out in English for anyone who doesn't understand Spanish :)
Also if you want sweet things, have you heard of dulce de membrillo? It is a cooked down version of quince jam basically, and if you can at least get hold of minced quince or quince jam, you can use it in a pie filling! :) Very yummy ^^

omg dulce de membrillo is so gooooood.
and i lived off of fugazza while i was there. it really saves you at 5am when kentucky pizza is the only restaurant open.

I must admit to preferring dulce de batata con chocolate :P But I love dulce de membrillo too, I dunno why it's not more popular in other countries! Sooo yummmmy!
