I would throw out the lemony potatoes (unless you're greek or it's summer) and either go with highly whipped Idaho potatoes or smashed red potatoes. You can keep it simple with earth balance and salt or you can do it up with roasted garlic and rosemary - much more Thanksgivingy.

Embrace the seasonal foods and do some roasted beets with your brussel sprouts if you won't do apples, they need a hint of sweetness to really amplify their flavor.

Spinach and tomatoes sound like breakfast - maybe try kale and mushroom?

I can vouch for the Lemony Roasted Potatoes. They are a favorite of the omnis in my life, they always request them from me.
