Cashew Ricotta

Tonight I plan on doing some roast veg in a tomatoe-y Italian-ish sauce. Topping it with blobs of cashew ricotta and bread crumbs then grilling it to crisp it up ( Read more... )

Have you tried Chinese or Asian supermarkets? I normally find that it only costs about 90p for 300g there, and they have a huge variety. In contrast, the specialist vegan shop nearby only has two kinds (firm, and silken), and charges £3 something for the same amount.

My local Asian grocer is rather central Asian, I think I'd need more Eastern Asian because I've never seen it in there. which would mean getting the bus to the Chinese supermarket. The bus fare makes it a lot good bit more expensive if I'm only going for one pack of tofu

tofu costs less than $1 a block... and it is very versatile and takes on the flavor or whatever you make it with, so I would suggest trying it out! You can make sweet or savory dishes :) I have not tried cashew ricotta, but if you only had cashew, I think it might be rather dry?

Not where I live, it's about £2.50 for plus £2.40 on the bus (which I wouldn't usually get to go shopping but my normal shop doesn't have tofu) for 400g. I usually spend £8-12 per week on food. That's about $4 for the tofu, another $4 for the bus out of my $12.50-19 budget.

In short, tofu's really expensive to me

I think it will work if you use extra cashews instead of the tofu. Just add more liquid (do you have some sort of non-dairy milk?) so it isn't too dry and make sure you soak the cashews beforehand.

I didn't think of using milk instead of water, I bet it is tastier. Though I only have sweetened, that could be a bit weird

I just made this the other day. I don't think it would work unless you added a similar filler. I don't know what else would work, though.

I tried it and it tastes good with no tofu, it is a bit dry but that's easy to sort next time. TBH I'm now a bit confused about what the tofu in it is meant to achieve, my texture wasn't particularly off.
