Harvest Stew with Kale, Scallions, Tomatoes, and White Beans (and a question about squash)

 I'm taking the University of Oregon's Urban Farm course this term (jealous?), and every few days I get to take home a giant bag of whatever veggies we harvest that day. Yesterday we harvested at least 10 lbs of dinosaur kale, and I took home a bunch of it. I was really craving the "Braised Seitan with Brussels, Kale, and Sun-Dried Tomatoes" recipe ( Read more... )

Hah. I was intrigued by that as well. It took like an hour of digging around through the PPK forums, but apparently a few years ago there was a falling out between the girl from Vegan Yum Yum and Josh from Herbivore, which led to her canceling her book deal with them very last minute. Isa and other people on the PPK sided with Josh and some of them basically decided to boycott the VYY book and buy two copies of Herbivore's other cookbook (Yellow Rose Recipes) instead. Portland vegan drama. Wasn't as juicy as the Squash Bisque made it sound.

i haven't done anything with delicata squash, but my go-to for random winter squashes is: cut in halves/quarters/etc (leave the skin on; it's easier this way), brush with olive oil, put in oven at 400ish until the skin starts to wrinkle and the squash gets soft. remove from oven, let cool to the touch, peel away the skin. from here i will usually do one of two things: chop it up and add it to sauce (like curry, etc) with other faster-cooking veggies, or i will blend it up and make a dip out of it. have you ever had butternut squash "hummus"? it's amazing. or, once roasted, you could make soup out of it.
pretty much what i do whenever i encounter a new vegetable is i pretend it's one i already know how to cook, and see what happens! :)
