plantain pie? plantain cake? a cake-shaped pile of platanos maduros?

my boyfriend's birthday is coming up. his very favorite food in the world is platanos maduros - the decadent, soft, sweet kind of fried plantains - and i plan to serve them at the party that i'm making for him. i could just offer up a dessert platter of plantains and vice cream, but i thought this would be a good opportunity to be creative. he was ( Read more... )

I was looking for banana cake ideas recently and came across a dish called guatemalan mole, which is plantains in a mole sauce. So maybe you could bake the plantains (or boil them), then mash 'em, and use them as one of the layers in a chocolate (or chile-chocolate)-plantain pie?

I grew up eating this.

If you don't want to make this, you can maybe run with the idea of cooking the plantain with some white or brown sugar. Or perhaps make a caramel...

hmm I dont know about plantain pie really but I think plantain upside-down cake might be a win. or if you made the equivalent of banana pudding using plantains and then layered it with wafer cookies and vegan whipped cream. Kinda like that trashy-yet-tasty banana cream pie you make with vanilla pudding, bananas, nilla wafers and whipped cream.

i would make a sweet potato or pumpkin pie recipe and use the plantains instead.
