Chocolate frosting with eggs, what to substitute?

This is my mother's favorite frosting. She's being awesome and making all of the desserts and sides at her birthday party vegan, and so I'd love to make this icing as close to the recipe that she loves as I can ( Read more... )

It sounds like a buttercream frosting...only with eggs in it, which i haven't heard of. I feel like since they aren't being cooked, just omitting them could work.

I've never seen eggs in an icing recipe! Maybe something like plain soy yogurt or tofu would work as a replacer... Even mashed bananas, but those would probably alter the flavor too much. Or maybe you could just omit the eggs and add a starch a teaspoon at a time to get a thicker consistency.

Flax seems like the best option, but I'm at a loss as to why the eggs are necessary. It's like it's a custard or something.

Since this isn't an Italian butter cream the eggs seem pointless to me. I would just omit them. If the icing is to stiff because of the lack of liquids add a splash of soy/almond/rice/whatever milk

Just omit them. I've never seen frosting with eggs before, so they can't be too necessary.
