My go-to beans-and-veggies recipe

I make this all the time, but especially in the summer when lots of suitable veggies are in season. It's inspired by Mexican flavors but I'm sure it's not authentic to any particular cuisine. Mmm, yes, we make something like this all the time. Delicious as it is, or wrapped up as taquitos, fried into "quesadillas" without the queso (this works best if you mash the beans a bit), put into wraps, etc., etc. So good!

Wow, I've never heard of that! Cilantro is sort of the bane of my existence in a way, because when I buy it I almost never can use it up before it goes bad. I've tried the dried cilantro flakes and they're just awful. The best solution is to grow my own cilantro, but unfortunately that only works for a portion of the year. :)

I don't know if they still carry them, but I got the cilantro cubes at Trader Joe's a while back. Super helpful! If you can't find it it'd be worth making your own version of with the ol' Vitamix and just freezing a thin layer in a Ziploc.
